Trout
A typical fish of creeks and brooks, the trout may also inhabit lakes and valley streams, providing the water is fresh and has plenty of oxygen. Italy is one of the world’s major producers of trout, while in the Veneto, fisheries are concentrated in the province of Vicenza. The brown trout (salmo trutta fario), which belongs to the family of salmonidea has been raised in the waters that flow through the towns of Valdastico, Posina, Laghi, Cismon and Velo d’Astico since 1956. The brown trout has very delicate white meat and is the best quality of trout. It has variable colours and streaks and the classical orange spots along its sides. But the morphological characteristics of the valley streams and the clear, cold mountain water provide an ideal habitat for the development of fisheries that raise this species. However In the Chiampo valley the iridea (rainbow trout) species of trout is raised. This species has black markings on its tail fins and an iridescent band on its sides which becomes particularly evident during the period of reproduction. The rainbow trout is marketed in sizes ranging from 800 grams to a kilo; the product destined for processing is captured live in the fishery vats and processed, packaged and shipped to destination immediately.
